SAUTÉED LETTUCE, ‘VEGETARIAN BACON’ AND YOGURT
This is a delicious and simple dish that can be served as a salad or a side dish (in which case without the yogurt dressing). We are used to Little Gem leaves being served fresh in salads, but if you gently sauté the leaves in a little oil you will have a surprise – they take on a whole new flavour. In this dish I’ve used potatoes with red or slightly purple flesh to make the crisps that look like bacon strips, adding a fun touch to the dish!
